Chipotle Chicken Mac and Cheese

Ingredients
8oz Barilla Protein plus Penne
3tbsp light butter
3tbsp flour
2 cups fairlife skim milk
4 chipotle peppers in adobo
1/4 cup whipped cream cheese
1.5 cups low fat cheddar cheese
1 cup low fat mozzarella
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
1 tsp chili powder
1.5lbs boneless skinless chicken breast
1/2 cup chicken broth
Directions
Sear the chicken on one side in a pan with light butter. Cook for 4-5 minutes.
Flip the chicken, add some chicken broth, and cover the pan, poaching the chicken.
Once chicken is fully cooked, add to a stand mixer and shred.
Cook protein pasta according to instructions
Make roux by adding butter and flour to a large pot.
Add milk and whipped cream cheese
Add rest of cheeses slowly until melted
Add in noodles, then chicken breast. Mix thoroughly.
